This speedy Thai curry recipe combines a handful of vegetables, coconut milk, and peanut butter to create a mouth-watering dish that’s perfect for students. With just a few steps, you can enjoy the rich flavours of Thailand without spending hours in the kitchen.

Ingredients:

  • Broccoli florets
  • Bell peppers (any colour you prefer)
  • Carrots, thinly sliced
  • Baby corns, halved
  • Green beans, trimmed and cut into bite-sized pieces
  • 1 can (14 oz) of coconut milk
  • 2 tablespoons of peanut butter (smooth or crunchy)
  • Salt, to taste
  • Butter or ghee for cooking
  • Black pepper, to taste
  • Coriander powder, to taste

Instructions:

  1. Heat the Pan:
    • In a pan, heat a bit of butter or ghee over medium-high heat.
  2. Sauté the Veggies:
    • Once the butter or ghee is hot, add all the chopped vegetables to the pan. These can include broccoli florets, bell peppers, thinly sliced carrots, halved baby corns, and trimmed green beans.
    • Sauté the vegetables for a few minutes, stirring occasionally. Let them cook until they become slightly tender.
  3. Season the Veggies:
    • Now, it’s time to add some flavour. Sprinkle a pinch of salt, black pepper, and coriander powder over the sautéed vegetables.
    • Continue to sauté for another minute or so, allowing the spices to coat the veggies evenly.
  4. Introduce the Creaminess:
    • Pour in the can of coconut milk, covering the sautéed vegetables.
    • Cover the pan with a lid and let it simmer on medium-low heat for about 4-5 minutes. This allows the vegetables to absorb the creamy coconut goodness and become perfectly tender.
  5. The Peanut Butter Twist:
    • Now comes the secret ingredient that gives this Thai curry its signature flavour. Add 2 tablespoons of peanut butter to the pan.
    • Stir well to combine the peanut butter with the coconut milk and vegetables. The result should be a creamy and rich sauce that’s oh-so-delicious.
  6. Serve and Enjoy:
    • Your delicious Thai curry is now ready to be enjoyed. You can serve it with a side of rice to make it a complete and satisfying meal.

This easy Thai curry recipe proves that you can whip up a tasty and satisfying meal in no time, even as a busy student.
