Cheap and Easy Vegan Uni Lunches
10 Chwefror 2021Here are 5 super quick and delicious vegan lunches to make at university!
- The classic – avocado on toast
What you’ll need:
- 2 slices of bread
- vegan Vitalite spread (optional)
- 1 whole or half of a ripe avocado (75p from Lidl!)
- sprinkle of salt
- sprinkle of pepper
- any snacks to add to the side
Whilst you toast your bread, cut open the avocado and take out the seed with a sharp knife. You can either use a whole avocado for extra flavour or save half for the next day. Once the bread is toasted, butter it and spread the avocado on top. Make sure to add a sprinkle of salt and pepper as this really enhances the flavour of the avocado. Finally, add any veggies or snacks to the side!
2. Pesto baguette
This lunch idea is a new discovery of mine and is now my new favourite!
What you’ll need:
- baguette (22p from Lidl)
- vegan Vitalite spread (optional)
- pesto (Tesco free from pesto is the best!)
- 3-5 cherry tomatoes
- cucumber
- any snacks to add to the side
Slice you baguette in half and butter the middle, then spread a reasonable amount of pesto, but not too much! Cut some tomatoes and cucumber to put into the baguette and prepare any snacks to go on the side. It’s that simple!
3. Hummus, lettuce and tomato sandwich
What you’ll need:
- 2 slices of bread
- vegan Vitalite spread (optional)
- hummus (69p from Lidl)
- 3 cherry tomatoes
- lettuce
- any snacks to add to the side
Spread butter and hummus onto one slice of your bread. Slice the cherry tomatoes and put them on top of the hummus, then add the lettuce leaves. Finally, prepare any snacks to go on the side. In the picture above, I had sliced cucumber and banana chips.
4. Spaghetti hoops on toasted bagel
What you’ll need:
- 1 bagel
- vegan Vitalite spread (optional)
- 205g Heinz spaghetti hoops tin (55p from Tesco)
- any snacks to add to the side
Whilst you toast your bagel, pour the spaghetti hoops into a microwaveable jug or into a pot (on the stove) and heat them up following the instructions on the tin. Once your bagel is toasted, butter your bagel and add the hoops on top. Enjoy warm! Serve with any snacks you desire; this time I had an Alpro chocolate dessert and orange juice.
5. The lazy leftover pasta salad
If you’ve made pasta the night before, leave some leftover for lunch the next day to make a pasta salad!
What you’ll need:
- leftover pasta
- lettuce
- tomatoes
- cucumber
- vegan cheese (optional)
- red pepper
- carrot
- sugar snap peas
- olives
- any salad item you enjoy!
Just mix together your leftover pasta with any salad items, simple!
These simple, cheap, and delicious lunches are a must for any vegan (or non vegan!) student.
