She\u2019s written six cookery books and has cooked professionally across the globe. She was keen to share one of her favourite (and thriftiest!) recipes with the Cardiff community.<\/p>\n<p>\u201cI make soups often through the colder months. Their ingredients are determined by whatever vegetables I have to hand and (more often than not) some thrifty lentils or beans, which will muscle their way into the pan!\u201d<\/p>\n<h3><strong>Let&#8217;s get cooking&#8230;<\/strong><\/h3>\n<p><strong>Shopping list <\/strong><\/p>\n<p>Serves 4<\/p>\n<p>500g of carrots, peeled and roughly chopped<\/p>\n<p>1 onion, finely sliced<\/p>\n<p>2 tablespoons of olive oil, plus more to serve<\/p>\n<p>A big pinch of salt, plus more to season<\/p>\n<p>1 teaspoon of ground cumin<\/p>\n<p>1 teaspoon of ground coriander<\/p>\n<p>250g of split red lentils<\/p>\n<p>Freshly ground black pepper<\/p>\n<p>4 tablespoons of za\u2019atar, optional<\/p>\n<p><strong>What you\u2019ll need<\/strong><\/p>\n<p>Large saucepan<\/p>\n<p>Roasting tin<\/p>\n<p>Stick blender or food processor<\/p>\n<p><strong>Method <\/strong><\/p>\n<p>Step 1<\/p>\n<p>Put the carrots and onion into a roasting tin. Add the olive oil and big pinch of salt, and season with black pepper. Add the ground spices, mixing well to coat.<\/p>\n<p>Step 2<\/p>\n<p>Cover the roasting tin tightly with foil and roast the carrots and onion at 190\u00b0C for about 35 minutes, until tender.<\/p>\n<p>Step 3<\/p>\n<p>Rinse the red lentils well in cold running water and place in a saucepan with 1 litre of water. Place over a moderate heat and bring to boil. Skim off any froth that rises to the surface, then reduce the heat and simmer for 15\u201320 minutes, until cooked and very soft. Blend the lentils until smooth.<\/p>\n<p>Step 4<\/p>\n<p>Add the roasted carrots and onion and process to a texture of your liking.
