He specialises in food from Wales and Spain and publishes a weekly newsletter all about Welsh food and drink called <a href=\"https:\/\/welshkitchen.substack.com\/\">The Welsh Kitchen.<\/a><\/p>\n<p><strong>\u201c<\/strong>There comes a point when you look in the fridge and see a few random items in the veg drawer. If you\u2019ve not got pasta or rice, then these fritters are just the job. They\u2019re great as part of a cooked breakfast, a quick dinner, or a mid-afternoon snack.\u201d<\/p>\n<h3><strong>Let&#8217;s get cooking&#8230;<\/strong><\/h3>\n<p><strong>Shopping list<\/strong><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p>1\/2 a large sweet potato or a potato<br \/>\n1 medium carrot<br \/>\n1 small onion<br \/>\n1\/4 teaspoon ground cumin<br \/>\n1\/2 teaspoon chilli powder<br \/>\n1\/2 teaspoon English mustard powder (or a dollop of mustard)<br \/>\n3 tablespoons of flour<br \/>\n1 free-range egg<br \/>\nBacon and egg (optional)<\/p>\n<p><strong>What you\u2019ll need<\/strong><\/p>\n<p>Large bowl or large saucepan<\/p>\n<p>Cheese grater<\/p>\n<p>Spoon, fork or your hands<\/p>\n<p>Frying pan<\/p>\n<p>Spatula, fish slice or knife<\/p>\n<p>Kitchen roll<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Step 1<\/p>\n<p>Grate the sweet potato and carrot into a large bowl.\u00a0Chop or grate the onion and add to the bowl. Stir the vegetables together. Pat down firmly with kitchen roll to absorb moisture.<\/p>\n<p>Step 2<\/p>\n<p>Add the cumin, chilli powder, mustard and flour to the bowl and mix until everything is evenly coated.\u00a0Crack the egg in a cup and whisk with a fork. Add the egg to the other ingredients to form a sticky mixture.<\/p>\n<p>Step 3<\/p>\n<p>Heat a drizzle of oil or butter in a frying pan over a medium-low heat. Make palm-sized burgers with the mixture by squeezing and squashing them with your hands and place them in the hot pan.<\/p>\n<p>Step 4<\/p>\n<p>Cook for five minutes until the underside is brown, before flipping and cooking for a further 5 minutes.
