This is one of her favourite recipes, she loves it so much she even named her blog after it!<\/p>\n<p>\u201cThis is a great recipe for using up any leftover beer (yeah, right!), cheese or stale bread and it works well for a light pre- or post-lecture lunch. When I was at university, it served as a tasty way to line my stomach ahead of a night out too!\u201d<\/p>\n<h3><strong>Let&#8217;s get cooking&#8230;<\/strong><\/h3>\n<p><strong>Shopping list<br \/>\n<\/strong><\/p>\n<p>4 thick slices of white bread<\/p>\n<p>250g of Welsh cheddar cheese or Caerphilly cheese, grated<\/p>\n<p>70ml\/3<strong>\u00bd<\/strong> tablespoons of beer, ale or stout<\/p>\n<p>1 free-range egg, beaten or 20g of unsalted Welsh butter, melted<\/p>\n<p>1<strong>\u00bd<\/strong> tablespoon of Worcestershire sauce<\/p>\n<p>1 tablespoon of English mustard or 1 teaspoon of English mustard powder<\/p>\n<p><strong>What you\u2019ll need <\/strong><\/p>\n<p>Medium-sized bowl<\/p>\n<p>Cheese grater<\/p>\n<p>Baking tray<\/p>\n<p><strong>Method<\/strong><\/p>\n<p><strong>\u00a0<\/strong>Step 1<\/p>\n<p>Lightly toast the bread and preheat the grill.<\/p>\n<p>Step 2<\/p>\n<p>In a medium-sized bowl, combine the grated cheese, beer or ale, melted butter or egg, Worcestershire sauce and English mustard or mustard powder.<\/p>\n<p>Step 3<\/p>\n<p>Divide the mixture between the four slices of toast and spread the mixture over each slice using a knife or spatula, covering the crusts too.<\/p>\n<p>Step 4<\/p>\n<p>Put the toast slices onto a baking tray and carefully place under a hot grill for 5-10 minutes, until golden and bubbling.<\/p>\n<p>Step 5<\/p>\n<p>Carefully remove from the grill, cut each slice in half and serve hot, either alone or teamed with a side salad and fruity chutney.<\/p>\n<p><strong>Optional <\/strong><\/p>\n<p>For a vegetarian\/vegan alternative, use vegan cheese, vegan Worcestershire sauce and dairy-free butter.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Our Student Union tester, Chris Grieve (Biochemistry 2019-) VP Societies, says\u2026<a href=\"https:\/\/blogs.cardiff.ac.uk\/alumni\/wp-content\/uploads\/sites\/323\/2021\/12\/P.9-Chris-Grieve-SU-tester.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-7776 alignright\" src=\"https:\/\/blogs.cardiff.ac.uk\/alumni\/wp-content\/uploads\/sites\/323\/2021\/12\/P.9-Chris-Grieve-SU-tester.jpg\" alt=\"\" width=\"160\" height=\"160\" srcset=\"https:\/\/blogs.cardiff.ac.uk\/alumni\/wp-content\/uploads\/sites\/323\/2021\/12\/P.9-Chris-Grieve-SU-tester.jpg 1250w, https:\/\/blogs.cardiff.ac.uk\/alumni\/wp-content\/uploads\/sites\/323\/2021\/12\/P.9-Chris-Grieve-SU-tester-100x100.jpg 100w, https:\/\/blogs.cardiff.ac.uk\/alumni\/wp-content\/uploads\/sites\/323\/2021\/12\/P.9-Chris-Grieve-SU-tester-40x40.jpg 40w, https:\/\/blogs.cardiff.ac.uk\/alumni\/wp-content\/uploads\/sites\/323\/2021\/12\/P.9-Chris-Grieve-SU-tester-200x200.jpg 200w\" sizes=\"auto, (max-width: 160px) 100vw, 160px\" \/><\/a><\/strong><\/p>\n<p>\u201cThese are a great veggie option before a night out, just make sure you use all the mixture and spread across the whole toast, or you&#8217;ll end up with burnt corners like mine!\u201d<\/p>\n<p><em><strong>Enjoyed this recipe?
